There sustainability of insect breeding for the production of flour proteins and new products must also consider the use of substrates in a circular economy perspective. In this context, lines of research is underway to evaluate the use of by-products of the food industry as basic components in diets of Tenebrio molitor breeding. Performance results production obtained and application criticalities are discussed.
